One of Evan's favorite homemade meals is my chicken "cordon bleu". I use quotations marks because this can't be compared to a gourmet French chef's version, this is more like a less classier Americanized version of it. But we love it anyway!
I use the baked chicken recipe for this one. The difference is I butterfly the chicken breasts after coating them with breadcrumbs and put a sprinkling of cheese with a slice of low-sodium bacon on it. Then I close it with a toothpick and bake it the same. It tastes awesome and changes it up a little bit. (Even as much as I love baked chicken, it can get boring sometimes.)

For clarification, sadly I mean we are celebrating by adding a little part-skim cheese and a slice of bacon to the chicken. But it tastes great and why not? I needed to add more calories to my diet today anyway.

P.S it's my lovable dog Mickey's 3rd birthday. He got absolutely spoiled today with toys and treats. I bought him a monstrous bone filled with peanut butter to celebrate. I also crated his little brother, Milo, so he could have some time alone to chew. :) He proceeded to nom on it for at least 2 hours and then promptly fell asleep clutching it in his paws.
